This aphorism of the fame Brillat Savarin is a good resumé of the research we conduct on hazelnut or filbert as you wish. Indeed, great cooks and pastry masters are in need of new products to nourish their talents and imaginations. We created a product “The Cazette” that is becoming as years pass by a new star in the firmament of cooking. Twenty years ago the “Fleur de noisette” (hazelnut’s prime) was proposed for the first time to the then top of the French cooks Bernard Loiseau.
